The front edge, where the controls are, is slightly higher at 2.375", presumably to offer more airspace to the cooling fan which is mounted beneath the front of the unit. **Q: Which temp does this start with? highest or lowest or medium?** A: It defaults to medium (5), although even 'medium' for this one is really pretty high (I would burn sugar when caramelizing it anything below 2.5, so 5 would be way too hot). **Q: What is the maximum diameter pan the heating element (not the drawn-on circle) will 100% accomodate?** A: Interesting question. I didn't really know so I put a couple of pans on it this morning to see; I used an IR thermometer to check temps in different parts of the pans. I tested with a 12" saute pan (11 inch contact area) and a 10 inch fry pan (8 1/2 inch contact area). What I found is that only about 8 inches of the 9-inch diameter circle generated direct heat in the pan. Same pans on my gas range had much better heat distribution. Hope this helps. **Q: Coil diameter?** A: If by coil size, you mean the induction zone, there is a 5 inch minium for the size of the bottom of the pan. The outer ring is about the maximum size for the bottom. The unit is says its 14" wide and 11" deep but it is clearly longer than wider - guessing they have the dimensions listed wrong. As I recall, I found an 8-9" bottom was about the max. I think the manual cautioned about letting a bigger pot exceed the circle. If you can find the on their site, it might say. Do be aware that within a year or two, the speed at which it heats water will decline. That is the reason I ended up with a gas range rather than an induction.
