Well made
This simple device works perfectly to shave fresh truffles. The blade is sharp; it's easy to adjust the thickness of the slice, and easy to clean.If I was using it to shave something hard, like high quality chocolate, I might be concerned about the blade's ability to maintain its edge; but, so far, I've only used it for truffles, so cannot comment on edge retention.
