Takes a lot longer to cook things.
We purchased this oven in June 2019 to replace our previous model of 18 years that developed problems keeping the door shut. Times have changed. Washing machines and dishwashers that used to take 45 minutes from start to finish now take 2 hours. Apparently newer ovens are the same. Example: We were heating up some frozen french fries. Directions say 400 degrees for 15-20 minutes. We preheat the oven to 400 degrees using convection bake, pop in the tray of french fries, and even after 45 minutes they're not properly cooked yet. In fact a meat thermometer only reads 180 degrees in the oven. So we immediately call for warranty service.Repairman shows up with digital thermometer and explains that our meat thermometer isn't an accurate measuring device but that we also can't trust the oven when it says it has reached the desired temperature. Instead, ovens heat up to about 10 degrees below that temperature, then cool down to more than 30 degrees below it, then heat up a little closer, cool down again, then heat to a hotter temperature, etc. until the average is close to the requested temperature. So we need to preheat the oven for a good 30-45 minutes before trying to bake something. That's kind of an important thing to know. We spent over $3k on the oven and expected better results. Repairman says the $5k-$6k ovens do the same thing.So we're generally disappointed with the oven but apparently there aren't any better alternatives.

Bakes very unevenly
Our KitchenAid oven bakes extremely unevenly. It will over bake a large pizza on one side while barely baking the other side. Twice when we have called in under the "warranty" the repairman have told us that nothing can be done about the uneven baking.
