Preserving food is as old as time itself, and I can remember my nan making her own preserves – blackberry, damson, apricot jams. I’ve read before about water bath canning, and wanted to find out more, especially as so much food is just thrown away these days. In the economic climate, we need to be more careful with what we waste. This book covers the water bath canning and preserving basics, how to avoid mistakes and what you need, and combines modern technology and some of Grandma’s top secrets to be a canning pro.Getting the kit you need is an additional cost if you go for the pressure canner, so I’m going to start with jars and lids, a funnel, a big saucepan, a rack to sit in the bottom of the pan and something to lift the jars out.The recipes cover the sweet - jams and jellies, and fruit - to the savoury – salsa, sauces and pickles – for the beginner, to veg, beans and soups for the intermediate, and then poultry, meat and seafood for the advanced. I have a bunch of apples from the tree in our garden to make the apple jelly, and that will be my first attempt. The recipe doesn’t require a heap of ingredients, provides important info about nutritional content and the steps are clearly laid out. Each recipe follows the same format, and lists every single thing you need to do, which is reassuring.I am excited to give this a go, and look forward to trying out the results of my water bath canning and preserving.
