Candy Melt viscosity can be affected by humidity and air temperature, and more problems tend to occur toward the end of summer. We recommend adding small amounts of EZ Thin, melted vegetable shortening or coconut oil to help improve the texture and reduce thickness—start with 1 tsp per 12 oz bag (please note vegetable oil or other room-temperature oils are not recommended). Never add milk, cream, or water to candy as it will seize up and harden. Candy melts can overheat and become "cooked" and harden if heated at too high a temperature - to prevent this, once they start to melt, stir well and let cool for 2-5 minutes and texture should improve. The ideal temperature is between 100 and 105F. We recommend short bursts of heat and frequent stirring to prevent overheating and hardening.
